Croque Madame with Spinach and Smoked Salmon



This sandwich is a fancy take on the classic Croque Madame. It has smoked salmon, Swiss cheese, and fresh spinach layered inside, with a creamy sauce and a perfectly fried egg on top.

Ingredients:

  • 4 slices of bread
  • 4 slices of smoked salmon
  • 4 slices of Swiss cheese
  • 2 cups of fresh spinach leaves
  • 4 eggs
  • 4 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 1 cup of milk
  • Salt and pepper to taste
  • Nutmeg optional

Instructions:

Warm the oven up to 190C 375F

Melt 2 tablespoons of butter over medium-low heat in a saucepan

This will make a roux

Add 2 tablespoons of all-purpose flour and mix it in

Add 1 cup of milk slowly while whisking until smooth

You can add salt, pepper, and nutmeg if you like

This should take about two to three minutes

Take it off the heat and set it aside

A little toast on the bread slices

Put spinach leaves on two pieces of bread

Then put slices of smoked salmon and Swiss cheese on top of the spinach leaves

Add another slice of bread to the top of each sandwich

Melt the rest of the butter in a pan over medium-low heat

Fry eggs until they are done the way you like them, either sunny-side up or over-easy

Meanwhile, pour the sauce you just made over each sandwich that you have put together

Put the sandwiches on a baking sheet and heat the oven to 400F

Bake for 5 to 7 minutes, or until the cheese melts and bubbles

Add a fried egg to the top of each sandwich and serve hot
