Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 cup frozen corn kernels
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 4 cups chicken broth
- Salt and pepper to taste
- 1 cup shredded cheese for garnish
- 1/2 cup chopped fresh cilantro for garnish
- Tortilla strips or chips for garnish
Instructions:
Place diced chicken, black beans, diced tomatoes, corn, onion, bell pepper, and garlic in the Instant Pot
Add ground cumin, chili powder, paprika, salt, and pepper to the pot
Pour chicken broth over the ingredients in the Instant Pot
Close the Instant Pot lid and set the valve to sealing
Cook on high pressure for 10 minutes
Once done, do a quick release of pressure and open the Instant Pot
Stir the soup and adjust the seasoning if needed
Serve hot, garnished with shredded cheese, chopped cilantro, and tortilla strips or chips
