Healthy Chocolate Chip Oatmeal Cookie Pancakes



Enjoy the tasty mix of chocolate chip oatmeal cookies and pancakes while staying healthy with natural sweeteners, whole grains, and a little dark chocolate. You can eat these pancakes for breakfast or brunch and feel full.

Ingredients:

  • 1 cup old-fashioned oats
  • 1/2 cup whole wheat flour
  • 2 tablespoons cocoa powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 ripe banana, mashed
  • 1 cup unsweetened almond milk or any milk of choice
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips dark chocolate for added health benefits
  • Cooking spray or oil for greasing the pan

Instructions:

Put the old-fashioned oats in a blender and blend them until they become fine flour

Put the cocoa powder, baking powder, salt, whole wheat flour, and oat flour in a bowl

Add the mashed banana, almond milk, honey or maple syrup, and vanilla extract to a different bowl

Use a whisk to mix the ingredients well

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Don't mix it too much; a few lumps are fine

Add the small chocolate chips to the pancake batter and mix them in well

Add cooking spray or oil to a nonstick skillet or griddle and heat it over medium heat until it's hot

For every pancake, put 1/4 cup of pancake batter on the pan

Once the top starts to bubble, flip it over and cook the other side for another two to three minutes, or until it turns golden brown

Do it again with the rest of the batter, adding more oil to the pan if needed

When the chocolate chip oatmeal cookie pancakes are still warm, top them with your favorite healthy things, like Greek yogurt, fresh berries, or honey
